A simple and delicious breakfast made with crispy air fryer potatoes and perfectly cooked eggs. Ready in under 30 minutes, this recipe is perfect for a quick and satisfying meal.
Ingredients
2 medium russet potatoes, peeled and diced into 1/2-inch cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
4 large eggs

Instructions
Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a medium bowl, toss the diced potatoes with olive oil, salt, black pepper, and smoked paprika until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 12 minutes, shaking the basket halfway through to ensure even cooking.
While the potatoes are cooking, spray four small, oven-safe ramekins or silicone cups with cooking spray.
After the potatoes have cooked for 12 minutes, carefully remove the basket. Evenly distribute the potatoes into the ramekins.
Crack one egg into each ramekin over the potatoes.
Return the ramekins to the air fryer basket and cook at 350°F (175°C) for 3 to 5 minutes, or until the egg whites are set and yolks reach your desired doneness.
Carefully remove the ramekins from the air fryer. Let cool for 1 minute before serving.
