Air Fryer Potato and Asparagus

Description

A quick and easy recipe for crispy air fryer potatoes paired with tender asparagus, seasoned with garlic and herbs for a delicious side dish.

1 pound baby potatoes, halved
1 bunch asparagus (about 12 ounces), trimmed and cut into 2-inch pieces
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper


Instructions

Preheat the air fryer to 400°F (200°C) for 5 minutes.
In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, garlic powder, Italian seasoning, salt, and black pepper until evenly coated.
Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 10 minutes, shaking the basket halfway through cooking to ensure even crisping.
After 10 minutes, add the asparagus pieces to the bowl with the remaining 1 tablespoon of olive oil and toss to coat.
Add the asparagus to the air fryer basket with the potatoes and cook for an additional 5 minutes until the asparagus is tender and the potatoes are crispy and golden brown.
Remove the potatoes and asparagus from the air fryer and transfer to a serving dish. Serve immediately.
