Ingredients
1 pound chicken sausage links, sliced into 1/2-inch pieces
1 large red bell pepper, seeded and sliced into 1/2-inch strips
1 large yellow bell pepper, seeded and sliced into 1/2-inch strips
1 large green bell pepper, seeded and sliced into 1/2-inch strips
1 large yellow onion, peeled and sliced into 1/2-inch strips
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
Preheat the oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it with olive oil.
In a large bowl, combine the sliced chicken sausage, red bell pepper strips, yellow bell pepper strips, green bell pepper strips, and sliced onion.
Drizzle the olive oil over the sausage and vegetables.
Sprinkle the garlic powder, dried Italian seasoning, smoked paprika, salt, black pepper, and crushed red pepper flakes (if using) evenly over the mixture.
Toss everything together until the sausage and vegetables are evenly coated with oil and seasonings.
Spread the sausage and vegetable mixture out in an even layer on the prepared baking sheet.
Place the baking sheet in the preheated oven and roast for 20 to 25 minutes, stirring once halfway through, until the vegetables are tender and slightly caramelized and the sausage is cooked through.
Remove from the oven and let cool for 2 minutes before serving.
