A simple and delicious one-pan dinner featuring savory sausage, crispy roasted potatoes, and colorful vegetables all cooked together on a sheet pan for easy cleanup.
Ingredients
1 pound smoked sausage, sliced into 1/2-inch rounds
1 pound baby red potatoes, quartered
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
1 medium red onion, cut into 1-inch pieces
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, combine the quartered baby red potatoes, sliced sausage, red bell pepper pieces, yellow bell pepper pieces, and red onion pieces.
Drizzle the olive oil over the mixture and sprinkle with garlic powder, smoked paprika, dried oregano, salt, and black pepper.
Toss everything together until the sausage and vegetables are evenly coated with the oil and seasonings.
Spread the mixture in a single layer on a large rimmed baking sheet.
Place the sheet pan in the preheated oven and roast for 30 to 35 minutes, stirring halfway through, until the potatoes are tender and golden brown and the sausage is cooked through.
Remove from the oven and sprinkle with chopped fresh parsley before serving.
