A warm and comforting bowl of apple muffin oatmeal that combines the cozy flavors of apple, cinnamon, and nutmeg with hearty oats for a delicious and nutritious breakfast.
Ingredients
1 cup old-fashioned rolled oats
2 cups water
1 medium apple, peeled, cored, and diced
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup milk
2 tablespoons chopped walnuts
Instructions
In a medium saucepan, bring 2 cups of water to a boil over medium-high heat.
Add 1 cup of rolled oats, reduce heat to medium-low, and simmer for 5 minutes, stirring occasionally.
Add the diced apple, 2 tablespoons of brown sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon salt to the oats. Stir to combine.
Continue to cook for another 4-5 minutes until the oats are tender and the apples have softened, stirring occasionally.
Remove the saucepan from heat and stir in 1/2 teaspoon vanilla extract and 1/4 cup milk until well combined.
Divide the oatmeal between two bowls and sprinkle each with 1 tablespoon of chopped walnuts before serving.
