A hearty and flavorful one-pan meal featuring tender beef and crispy potatoes cooked together with onions and garlic for a satisfying dinner.
Ingredients
1 pound (450g) ground beef
1 pound (450g) potatoes, peeled and diced into 1/2-inch cubes
1 medium yellow onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/4 teaspoon crushed red pepper flakes
2 tablespoons chopped fresh parsley
Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the diced potatoes to the skillet and cook, stirring occasionally, until they start to brown and become tender, about 12 minutes.
Remove the potatoes from the skillet and set aside.
Add the remaining 1 tablespoon of olive oil to the skillet.
Add the diced onion and cook until softened and translucent, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 7 minutes.
Season the beef with salt, black pepper, smoked paprika, dried thyme, and crushed red pepper flakes. Stir to combine.
Return the cooked potatoes to the skillet and stir everything together.
Cook for an additional 3-5 minutes, stirring occasionally, to allow the flavors to meld and the potatoes to crisp up slightly.
Remove from heat and sprinkle with chopped fresh parsley before serving.
